Coconut is made from the sap of coconut palm tree.
It is more nutritious and lower on the glycemic index than sugar.
Firstly, a cut is made on the flower of the coconut palm and the sap is collected. It is then placed under heat until most of the water has evaporated and all that remains is granulated, brown sugar.
It is similar to raw cane sugar, but different in size.
Coconut sugar is popular with raw cooks, as it works as a suitable substitute for many other sweetening agents.
